The Best Chicken Rice I have ever had.
Chicken rice is a Hainanese cuisine mostly associated with Chinese Cuisine. You can find this dish in many parts of the world including Singapore and Taiwan. Today I had the good fortune of finding this amazing dish right next door to Apple Hotel in Kuala Lumpur. The newly opened restaurant next to Apple Hotel actually isn’t officially open yet however people seem to slide through the gaps in this soft opening.
Stephen the owner who has ventured into the food business makes the rice himself without his chef who is currently in Taiwan. For those of you unfamiliar with chicken rice. Chicken rice is exactly as it sounds. Generally chicken broth and rice steamed together. The Chicken can be prepared in traditional Hainanese methods which involve the boiling of the entire chicken in and chicken bone stock, non halal version may include pork bones, reusing the broth over and over and only topping it up with water when needed, in accordance with the Chinese preferences for creating amazing master stocks.
This stock is not used for rice preparation, which instead involves chicken stock created specifically for that purpose, producing an oily, flavourful rice sometimes known as “oily rice” with Southeast Asian pandan leaves added sometimes. Some cooks may add ginger or coconut milk to the rice, reminiscent of the local Malay dish Nasi Lemak.
In different areas of Malaysia this may be served differently, for example Malacca may serve it as rice balls, Iphoh may make it the more Cantonese style with a side of steamed chicken and bean sprouts.
No matter where we talk about thou. This is the best chicken rice I have had. Let’s see if the restaurant can continue the consistency and create the same wholesome favor and taste for the next time.
